Assessment of aroma active compounds in chosen fruit types

This diploma thesis deals with the determination of aroma compounds in selected species of less known fruits (sea buckthorn, cornelian cherry, rowanberry, medlar, japanese quince and chokeberry). The theoretical part is focused on the description of these plants, their chemical composition, possibility of utilization and processing. Aroma compounds were identified and quantified in experimental parts. The aroma compounds were extracted by solid-phase microextraction and analysed by gas chromatography. A total of 45 compounds were identified. This compounds included 17 alcohols, 9 ketons, 8 aldehydes, 6 acids and 5 esters. Concurrently, the sensory evaluation of these fruits was carried out. The profile test and evaluation using graphical scales were used for evaluation of pleasantness and intensity of taste and odour.
The effect of the dehydration method on the profile of volatile substances of selected fruits

This bachelor's thesis focuses on the identification and quantification of volatile compounds in samples of selected tropical fruits, namely banana, kiwi, mango, pineapple, and pitahaya. The theoretical part provides a detailed description of the lyophilization method as a food preservation technique, its principles, and its applications in the food industry. The principles of conventional drying methods are also explained, along with a brief introduction to various types of drying equipment. Additionally, the characteristics of each tropical fruit species, including their chemical and aromatic composition, are presented. Lastly, the principle and instrumentation of solid-phase microextraction and gas chromatography-mass spectrometry are explained. The experimental part of the thesis focuses on the identification and quantification of volatile compounds in samples of fresh, lyophilized, and dried fruit. The results indicate that the chosen methods of preservation have varying effects on the profile of volatile compounds in different tropical fruit species. Losses of compounds or the formation of new compounds may occur, which lays the foundation for further research in this area.

Suvorova, M., Cultivation and variety of annual peppers. Bachelor thesis. Brno: Mendel University in Brno, 2021. The bachelor's thesis deals with the cultivation of a selected assortment of annual pepper (Capsicum annuum L.). The aim of the thesis is to describe the growing technology and agricultural technology, including protection against diseases and pests and to determine the growth and yield indicators for a selected range of annual peppers. The first part of the thesis is focused on the elaboration of a literature review related to the origin of the species, botanical characteristics, habitat requirements, cultivation technology and assortment of varieties. The second part contains a description of an experimental experiment in the cultivation of peppers with subsequent measurement and evaluation of yield indicators. The results obtained during the experiment were tabulated and explained. The final part of the thesis is devoted to the discussion of the results and comparison with the results from previous years.
Educative possibilities on flowers and fruits morphology in examples of important plant species

The diploma thesis follows up on the issues addressed in the bachelor's thesis. It focuses on the possibilities of teaching the morphological structures of flowers and fruits of flowering plants. The results are transformed into a form that can be used effectively in teaching. The work contains several teaching materials. Specifically, two chapters which introduce teaching presentations and worksheets on the topic of Flower and Fruit.
The use of Natural Materials in Primary School Education

The theme of this diploma thesis is Natural materials in the subject of Craft at primary school (at the first level of the elementary village school). The aims and tasks of the diploma thesis are defined in the introduction. The theoretical part is devoted to concepts, goals and output competences in technical and environmental education at the first level. It deals with the description of well-known and lesser-known nature materials and the characteristics of various natural techniques when working with natural materials. The description of the elementary school in the village of Malonty is the integral part of the theoretical text. In the practical part, ten didactic themes for working with natural materials are proposed. Some of them were realized in practice and their effectiveness was verified through questionnaires for children.
Antioxidant activity of some cultivars of Sambucus nigra L. fruits.

8. Abstract The fruit of the European elder, Sambucus nigra L., is used in therapy as a drug Sambuci fructus for its diaphoretic, diuretic and laxative effects. Cultivars of European elder are being studied for the use in the food industry and pharmacy. The fruit contains especially large amount of anthocyanins and flavonoids that are known for their antioxidant activity. The aim of this work is to measure the antioxidant activity of the drug Sambuci fructus and of the fruit of the European elder cultivars Samdal, Mammut, Sambo, Sambu, Sampo, Bohatka, Haschberg, Weihenstephan, Allesö, and Samyl. An extract containing anthocyanins was obtained from fruit by a process based on extraction of frozen material with acidified water at high temperature, followed by separation with polymer non-ionogenic polystyrene-divinylbenzene sorbent. The content of anthocyanins in the extracts was determined spectrophotometrically using a modified pH-differential method. The absorbance was measured along the range of 350 - 600 nm. The content of the anthocyanins was quantified in units of mg of cyanidin 3-glucoside in 1 ml of extract. The content ranged from 0.33 - 2.76 mg cyanidin 3-glucoside/ml of extract. The highest content was in the extract from the fruit of the cultivar Samdal and the lowest was of the cultivar Mammut....
Concept of Increase and Accessio under Roman Law and Their Transformations

125 Abstract, keywords Concept of Increase and Accessio under Roman Law and Their Transformations The thesis emphasizes the importance of original modes of acquiring ownership. Its aim is to describe the Roman law roots of the original mode of acquiring ownership which is described as increase in the Civil Code in effect. It turns out that it is not one uniform institute at all, as it might seem, because it comprises four modes of acquiring ownership identified by the Roman law theory - not only accession as the Roman law concept, but also specificatio, commixtio, confusion and acquiring fruits. The introductory chapter focuses on the structure of the Civil Code, which is compared with its predecessors and with foreign codes. Some of them emphasize the peculiarity of acquiring fruits, while others do not even introduce the concept of increase in a broader sense. In four central chapters, norms regulating the acquisition of ownership are presented, both in Roman law and in modern civil codes in the territory of the contemporary Czech Republic. The civil code proposals from the first half of the 20th century are also considered, although they have never taken effect, they illustrate the development of legal science. Consumption of fruits and vegetables among pupils of younger and older school age in Milovice

v anglickém jazyce This bachelor thesis deals with the consumption of fruit and vegetables in children who attend elementary school in Milovice, specifically a group of pupils from 3rd to 5th grade was observed. As a class teacher, I have been watching the attitude of pupils toward fruit and vegetable consumption, as well as their eating habits, and I have noticed the low popularity of these foods, poor eating habits and an alarming number of children struggling with obesity. Although the school system is striving to educate pupils on healthy eating and healthy lifestyle, it is important to also educate parents of these children, who provide most food and manage children's leisure time. In the theoretical part of my thesis, I focus on fruits and vegetables as the basis of a healthy diet, substances present in these foods and risks resulting from insufficient amounts of these substances in the body. The practical part examines the popularity of fruit and vegetables among pupils, their preferences and the share of these foods in their diet. The Quality of Fruit and Vegetables on the Czech Market

The aim of this work is to find out the attitudes of Czech consumers to the quality of fruit and vegetables on the Czech market. The quality of fruit and vegetables in sales formats is also investigated. The theoretical part includes general characteristics of fruits and vegetables, conventional and organic farming and other certification systems, production and consumption of fruit and vegetables and foreign trade. The work describes the quality of food and organic food, the quality of freshness fruit and vegetables and legislative requirements.The practical part examines during questionnaire survey how consumers perceive the quality of fruit and vegetables on the Czech market. In this section was conducted research in retail chains and specialized stores in České Budějovice and Vlašim. For the research were selected red apples, bananas, tomatoes and cucumbers. Shops have been awarded points and the winner is the shop which got least points. The practical part was concluded with a structured interview with the founder of the Food Bank in České Budějovice.
